Egusi Soup Recipe

















I can eat this soup all day, this is one of my best and favourite soup, a bit expensive to cook as it look over there... well the fact is that... everybody love this soup..... and it's a must to know how to cook it, that's one of the most popular soup in African Especially Nigeria....

INGREDIENTS YOU NEED:
  • 1 Medium size of stock fish
  • 6 Medium size of Meat
  • 2 tablespoon (Grounded)
  • Ugu/Bitter leaf
  • 1 Medium bunch of pumpkin leaf
  • 2 Cups of water
  • 1 cooking spoon palm oil
  • 1 tablespoon of pepper (Grounded)
  • Salt to taste
  • Crayfish (Grounded)
  • 2 Cubes of Maggi
  • 2 Cups of Melon
  • 1 onion bulb
HOW TO COOK:
  1. Put the washed meat and fish in a pot, add the grounded pepper, onion, salt and little water, cook for about 20 minutes.
  2. Heat the palm oil in another pot and fry the grounded melon (Egusi) for some minutes.
  3. Add the cooked meat, fish and water, allow to boil for some minutes.
  4. The add more salt, seasoning cube and crayfish.
  5. Add the vegetable or bitter leaf, allow to heat for some minutes.
  6. Finally, remove from fire and serve with either pounded yam garri or fufu.
You have your egusi soup prepared and ready to eat.
